Perfectly Crappie Day Recipe
Ingredients
1 lb. Fish fillets (all bones removed)
1 box of Jiffy cornbread mix
4 cups Flour
1 cup Corn meal
1/3 cup Wildwood’s Fish and Potato Seasoning
1 tbsp. Salt
1 tbsp. Black pepper
32 oz. Canola oil
Instructions
- Prepare the best fish fry breading – a.k.a. our three-step breading – by taking three large and shallow containers, pans, or bowls (they need to be big enough to coat the fish on both sides) and mix together:
- Pan 1: 2 cups of flour and half of the Wildwood’s Fish and Potato seasoning
- Pan 2: 1 cup of flour, 1 cup of water, and salt and pepper
- Pan 3: cornbread mix, 1 cup of flour, and remaining seasoning
- Once your three-step breading is prepped, you are ready to become a lean, mean, fish coating machine. It’s time to for the crappie part of this perfect fish fry recipe (here fishy, fishy, fishy…).
- Rinse your fish fillets with cold water to firm up the fish. If your tap water isn’t quite chilly enough to firm up your fish, add ice into a bowl with water and rinse this way.
- After rinsing, pat your fillets dry with paper towels and bring over to your three-step breading pans.
- Bread each fillet by placing in pan 1, shaking the pan, flipping the fillet, more shaky-shaky, then repeat for pans 2 and 3.
- Once your crappie fillets are nice and coated, place them on a cookie sheet (making sure they aren’t touching each other) while you finish coating the rest of your fillets.
- Taking your trusty cast iron skillet, fill half deep with canola oil and let it heat up to 350°F.
- Slowly add your breaded fish fillets to the pan and cook for 2-3 minutes on each side or until they have an internal temperature of 155°F. Only add fish into your pan while the oil is hot. But, be careful not to overload each pan – let each piece have room to swim!
- Once your crappie is cooked, remove it from the oil and place on a wire rack to drain the remaining oil.
- Then it is time to grab a fork, pull up a chair, and enjoy this flavorful addition to your perfectly crappie day!
