Chili Bombs & Pork Tenderloin Recipe
Ingredients
Pan Spray
Biscuit Dough (or 2 cans premade dough)
Chili (make your favorite or use the recipe below)
1 Jalapeno
1 lb. Cheddar Jack Cheese, shredded
Sour Cream (to top)
Pre-Marinated Pork Tenderloin sliced into 1” each
Equipment
Cutting Board
Pit Boss Flatgrill
Parchment Paper
Rolling Pin
Sharp Knife
Toothpick
Small Bowl
Spoon
Muffin Tin
Ribriffic Seasoning
Procedure
- Preheat your grill to 400 degrees Fahrenheit.
- Take a slice of biscuit dough and stretch (or roll) into a thin, round piece. Place about 1 oz. of chili, a little cheese, and a slice of jalapeno in the center of the dough, and pinch edges closed until it is in a ball.
- Place biscuit balls into a sprayed muffin tin with the sealed side turned down. Repeat for the rest of the chili bombs.
- Bake on a flat grill for 15 minutes. Sprinkle with cheddar jack cheese and cook for another 3-8 minutes until the biscuit dough is cooked through.
- Slice the pre-marinated pork tenderloin into 1″ slices.
- Sear the pork tenderloin on the other side of the flat grill as the chili bombs cook.
- Once cooked, remove both items from the grill and let cool for a couple minutes. Top the chili bombs with sour cream and then enjoy these game day bites.
Wild Chili Recipe
Ingredients
1 cup Diced Yellow Onion
1 cup Diced Green Pepper
1 lb. Ground Beef
1 12-16 oz. can Tomato Sauce
1 cup Chili Powder
1/2 cup Granulated Garlic
1/2 cup Beef Base
1/2 cup Worcestershire Sauce
Procedure
- In a large pot, brown the ground beef. When almost cooked through, add the diced peppers and onions to the pot.
- Once the onions are clear, add the remaining ingredients and let simmer for one hour on low heat.
- Bon appetit!
Biscuit Dough Recipe
Ingredients
2 cups All-Purpose Flour
1 1/2 tbsp Baking Powder
1/2 tsp Saltt
1/2 cup Salted Butter, diced into dime-sized pieces
3/4 cup Cold Buttermilk
Procedure
- In a bowl, combine flour, baking powder, and salt.
- Cut the butter into the flour mixture until it is mealy (AKA crumbly).
- Then add in the milk and mix until it is incorporated.
- Once the dough is complete, roll it out and use a dull edge (like a glass or coffee cup) to cut the biscuits.
